Why a taper, and not a jar? Because a taper is the most ceremonial candle there is. It doesn't sit around being ambiance — it stands up. You have to give it a holder, give it a place at the table, and give it your attention, because a taper burns bright and finite: each one gives you about eight good hours, and then it's done, the way a first day is done.
